In one shallow bowl, whisk together the eggs, lemon juice, parsley, Locatelli Pecorino Romano, garlic powder, salt, and black pepper.
In another bowl, combine the breadcrumbs, lemon zest, and a generous handful of freshly grated Locatelli.
Dip each chicken cutlet into the egg mixture, then coat well in the breadcrumb mixture. Fry in oil over medium heat until golden brown, crispy, and cooked through. Transfer to a plate and set aside.
Meanwhile, cook the pasta until al dente, reserving some of the pasta water before draining. Toss the pasta simply with olive oil, freshly cracked black pepper, and plenty of freshly grated Locatelli.
For the sauce, melt the butter over low heat. Add the lemon juice, lemon zest, and a splash of reserved pasta water. Whisk together, then gradually whisk in the Locatelli over low heat until smooth and creamy, adding a little more pasta water as needed.
Spoon the creamy lemon sauce over the crispy chicken and serve alongside the pasta. Finish everything with more freshly grated Locatelli Pecorino Romano, fresh parsley, and cracked black pepper
