Pecorino Romano Pesto
- 2 cups packed fresh basil
- 2 cloves garlic
- ¼ cup pine nuts or walnuts
- 2/3 cup extra virgin olive oil
- ½ Locatelli Pecorino Romano
- Salt & pepper to taste
- Place basil, garlic, and nuts in a food processor and pulse until coarsely chopped. Add the oil and process until smooth. Season with salt and pepper.
- Place in a bowl and mix in the cheese.
- Store in an air-tight container.
