Cacio e Pepe White Beans
These creamy beans make the perfect side dish to chicken or fish, served with a crisp white wine.
- 1 TBSP olive oil
- 2 cups fresh spinach or kale chopped
- 1/2 white onion chopped
- 3 cloved garlic minced
- 1 can White Beans or Canellini Beans rinsed
- 2 cups vegetable broth or chicken broth low sodium
- 2 bay leaves
- 1 TBSP Italian seasoning
- Pepper to taste
- 1/2 c Locatelli grated
- Heat 1TBSP in olive oil in a large pan, sautéed spinach or kale until wilted. Set aside. Heat 1 TBSP olive oil in same pan, saute onions until translucent, add garlic, saute 5 minutes more. Add beans, saute 5 minutes, until heated through. Add broth, bay leaves and Italian seasoning. Bring to a boil, add spinach or kale back not pan, then lower heat and simmer beans until broth reduces and thickens (about 15 minutes). Remove bay leaves. Add fresh cracked pepper to taste, sprinkle with Locatelli. Serve hot and sprinkle more Locatelli on each serving.
