Whipped Pecorino Dip with Locatelli
- 1 ½ cups fresh grated Locatelli Pecorino Romano cheese
- ½ cup olive oil additional for garnish
- ½ cup Greek yogurt
- 1-2 Tbsp water
- Black pepper for garnish
- Toasted baguette and seasonal veggies for dipping
- Place grated Locatelli Pecorino Romano, olive oil and yogurt in a food processor or blender. Blend until light and fluffy, approximately 1-2 minutes, scraping down the side of the bowl a few times while blending. Add 1-2 TB of water to achieve desired thickness. Garnish with optional black pepper and a drizzle of olive oil and serve with grilled or toasted bread, crostini, seasonal veggies, or crackers.
